Cacao Superballs

These delicious raw treats are perfect for afternoon tea or a healthier alternative for dessert. However you enjoy these Cacao Superballs is up to you – we love to pair them with a cup of freshly brewed peppermint tea! Enjoy this easy no-bake recipe for yourself.

 

 

 

 

 

 

ingredients

½ cup nut butter of your choice

¾ cup oats

½ tbsp cacao powder

¼ cup desiccated coconut

¼ cup honey, agave or maple syrup

½ tsp vanilla essence

2 tbsp flaked almonds, toasted

2 tbsp mini dark chocolate chips/raisins / chopped hazelnuts

 

method

1. Start by gently toasting the almonds & coconut in a dry pan over medium heat – this will only take 30-60 seconds so keep an eye on your pan! Remove from heat as soon as you get the tiniest hint of golden colour.

2. Add all other ingredients into your mixing bowl in the order listed and give it all a good mix.

3. Check whether the mixture holds together nicely (you want to be able to form a ball in the palm of your hands without getting too sticky). If it’s too dry and crumbly, add a little more nut butter. If it feels too soggy, add a few more oats.

4. Roll the mixture into bite-size balls and leave to chill in the fridge or freezer so they firm up before you eat them.

The great thing about making energy balls is that you can play around with the ingredients and find flavour combinations you like. Just explore what you have in your cupboard once you’ve got the starter mix of nut butter and oats (try using seeds, any chopped nuts, chopped dried fruits, or a teaspoon of cinnamon or ground ginger instead of the cacao powder)

Once made, they will keep in the fridge for a week (store in a plastic tub) or you can freeze them and just take them out when you want them.
