Catherine’s Summer Potato Salad

Catherine’s summer potato salad is the perfect meal to keep cool and refreshed this summer.

When the summer heat is high, refreshing greens and salads feel like the perfect way to keep cool. Catherine’s summer potato salad is an all-natural explosion of taste.

With new potatoes to warm your stomach and a salad to help you feel fresh and restored.

ingredients

1 bag new potatoes

1 red onion, thinly sliced

1 bag sugar snap peas

1 courgette, sliced and grilled for a few mins in each side

Lemon juice / zest

Salt & pepper

A good glug of Pesto (we’ve been using homemade wild garlic pesto that Catherine made earlier in the year and froze)

method

    1. Boil your potatoes.
    2. Mix all the other ingredients together.
    3. Pour over the salad.
    4. Serve while the potatoes are still warm or leave to chill first.

Tip: If you don’t have pesto to hand, finely chop a bunch of herbs of your choice – dill, parsley, mint and basil all work well.  Mix them with olive oil, crushed garlic, Dijon mustard and a bit of apple cider vinegar.
