Raw Butternut Squash Smoothie
I love this quirky new smoothie recipe. I’d never have thought of using raw butternut squash in a smoothie but it tastes amazing and it is so filling. The cinnamon tops it off. I have been eating it recently post my early morning run and swim when the body needs a tonne of nourishment to recharge.
Low in fat, butternut squash delivers an ample dose of dietary fiber, making it an exceptionally heart-friendly choice. It provides significant amounts of potassium, important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems. So with all this goodness what is not to love!
Serves 2 large glasses or 4 mediums sized portions
2 cups Oat milk or other non diary alternative
1/2 can coconut milk
2 lose handfuls of spinach
2 tbsp natural yoghurt
1/2 medium sized butternut squash, peeled, seeds removed and diced into large chunks
1/4 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
2 tbsp sunflower/pumpkin seeds
2 tsp chia seeds
1 tbsp ground flaxseed
6/7 hazelnuts or nut of choice
Blend the milks and spinach first to a creamy consistency. Add remainder of ingredients except the squash, blend again.
Finally add the butternut squash in a few batches, so as not to over whelm the blender. Blending as you go.
The smoothie might be quite thick, in which case add more oat milk or water to you reach your desired consistency.
Pour into your best large pint sized glasses and top with an extra sprinkling of cinnamon if you wish.
Now go enjoy and feel nourished!
