Healthy Flapjack Recipe

Sweet tooths beware, this recipe is not only simple to make but deliciously moreish! Retreat chef Catherine of Wildings Vegan Kitchen has shared her healthy flapjacks that still use a touch of butter and a bit of syrup but most of the sweetness comes from the banana… it’s practically guilt-free!

 

 

ingredients

To make 12 decent size bars:
  • 150g butter (we use Naturli plant based)
  • 4 tablespoons syrup
  • 225g oats
  • 3 over-ripe mashed bananas (adds natural sweetness)
  • 100g chopped apricots
  • 100g mixed seeds

 

method

Melt butter and syrup in a pan then stir in all the other ingredients. Feel free to use other combinations of nuts/seeds/dried fruits (or even dark chocolate chips if you’re feeling indulgent!) We use apricots, cranberries and seeds in the ones pictured above.

Press into a lined baking tin and bake for about 20mins at 180 degrees.

Leave in pan to cool as they’ll need to set a bit before slicing.
