Vegan Spiced Banana Cake

This scrumptious recipe will definitely satisfy every sweet tooth in the house over the Easter break! Our fabulous retreat chef Catherine has lovingly shared her recipe with The Zest Life community to enjoy!




  • 200g self raising flour
  • 1 tsp baking powder
  • 100g soft brown sugar
  • 2 tsp cinnamon
  • 1 tsp mixed spice
  • 3 ripe bananas
  • 90 ml unsweetened almond milk (or choice of plant based milk)
  • 75ml rapeseed or light olive oil
  • 1 tsp vanilla bean paste



Step 1 – Sift together flour, baking powder, spices into a bowl and then mix in sugar
Step 2 -In a separate bowl, mash bananas and then add in milk, oil and vanilla
Step 3 – Stir wet ingredients into dry – just until it’s all combined
Step 4 – Pour into a greased tin and bake for 30-40 mins @180 (or until a skewer inserted into the cake comes out clean)

To make this into a special occasion cake, make a simple frosting by beating 1/2 cup plant based butter (we love Naturli but the Flora block is fine and widely available), 2 cups icing sugar. 1.5 tsp vanilla and 2 tbsp plant based milk together. Bake cake in 2 sandwich tins and spread icing in between the layers and on top of your cake. Then of course, enjoy!
